The magic recipe that makes kids eat eggplant!!
Peel and cut the eggplant into 1-inch cubes.
Toss with olive oil, salt, pepper, a few bread crumbs and sliced garlic.
Bake on an oiled baking sheet until the eggplant is dark, firm and chewy.
If you’re feeling adventurous, dip eggplant in plain Greek yogurt. Surprisingly delicious!
